BBQ Bacon Egg Sandwich

Because my boys don't care for tomatoes and it is mainly due to the skins of the fruit. I blanch my Tomatoes first. Here is a real quick overview of how to blanch a tomato, it is super simple:


boil a pot of water, place washed tomatoes in boiling water for about 1-2 minutes until the skin begins to split, pull out with a slotted spoon, the skin should just slip right off. voilà! Careful they will be hot hot!


BBQ Bacon Egg Sandwich

1 lb. Bacon or 1 pack of vegan bacon (I purchased Tabasco  bacon from Whole Foods Market for the boys)
Favorite BBQ sauce
3 Roma Tomatoes, blanched and skin removed, and sliced
6 Eggs, lightly beaten
3 T cream
6 slices of Bread
Softened butter

1. (vegi bacon has to be done in pan, instructions will follow)
Bacon: line pan with foil, lay out bacon on foil, brush with BBQ sauce, place another piece of foil loosely on top as to prevent spattering in oven (i hate bacon grease in my oven), place pan in oven and set oven to 400 F (do not pre heat), cook for about 17-25 minutes depending on your oven and how u like your bacon. remove and place on towels to soak grease. cover and keep warm.
Vegi  Bacon: grease pan lightly, place vegi bacon in pan when hot on medium heat, flip every 2 minutes until desired crispiness is obtained. remove from heat and keep warm.
2. meanwhile, heat tomatoes in oven on foil while bacon cooking.
3.combine eggs and cream, whisk. heat small amount of oil in skillet on medium. Add eggs mixture. move eggs around with flipper until almost done and turn off heat and remove from heat. cover
4. Butter  bread on one side. heat a skillet on high. toss bread in butter side down for 30 sec to a minute (until brown), repeat for all slices.
5. top bread with eggs, tomatoes, bacon and then bread. (if using vegi bacon throw a bit if BBQ sauce in there on bacon)
 This is my vegi bacon version, I don't eat Pork. but my boys do and they loved thier version. I make a vegi version and meat version of meals almost every night. Makes for a lot of cooking.
