Vegan White Sauce Lasagna
1 can of Coconut Milk
1/3 c vegan creamer of choice
1/4 c fresh squeezed lemon juice
3/4 c Vegan butter
1 T Lemon Zest
1/2 to 1 t nutmeg
5 sprigs of Tarragon, leaves from stem and chopped roughly
2 sprigs of Rosemary, leaves from stem and broken into bits with fingers (I really do mean your fingers)
1 Container (4 oz) of Vegan Grated Parmesan
Fresh ground Salt and Pepper
1 package of lasagna noodles (make sure no egg), prepared
1 package of extra firm tofu
1/2 lb. of spinach cooked or frozen and defrosted, water drained as well as possible
2 c chopped mushrooms
1 to 2 bags of Vegan shredded mozzarella ( like mozzarella so I used 2)
**note while you are making Alfredo you can prepare your noodles also it is wise to begin draining your tofu at this point to. Wash your tofu, place a clean towel on a plate, tofu on top and place a heavy cutting board or pan on top of tofu for about 20-30 min.**
Vegan Alfredo Sauce <--this recipe is for the amount you need for lasagna which is about double what you need for linguine
1. In medium sauce pan over medium heat, stir coconut milk, creamer, and lemon juice. Add Spread, stir occasionally as it comes to a simmer.
2. Add 1 T Lemon Zest and 1/2 to 1 t of nutmeg (I like nutmeg so i add 1 t). Remove from heat.
3. Add container of vegan grated Parmesan, whisk to combine (it works best if you add a little parm and whisk and then add more and whisk, etc. until it is gone. Add tarragon and rosemary, stir. Stir in fresh ground salt and pepper to your liking (I love pepper so i add a bunch to mine).
Lasagna
4. in food processor combine spinach, mushrooms, and tofu. Process up until mixed
5. in the bottom of your glass dish put enough sauce to cover the bottom. then add a layer of noodles. Next your tofu mixture,and then some cheese, next sauce. then noodles, tofu mixture, cheese, sauce, etc. until ingredients gone. make sure you have a layer of noodles on top, topped with cheese.
6. Set oven to 375 Degrees F and place lasagna in oven covered with foil for 40 minutes. After 40 minutes remove foil and let cool. If you have extra cheese you can put it on top or if you have extra sauce you can put that on top too.
