Happy St. Patrick's Day


Vegetarian Corned Beef with Potatoes and Carrots
I mourn my lost ability to eat meat sometimes so I was so excited to find vegan corned beef recipes. so i combined the lot and made my own!

Cheese Cloth and String (6")
2 Red potatoes chopped
3 Carrots, Chopped
Dry:
1c Vital Wheat Gluten
1T onion powder
1T pickling spice, ground
1-1/2T smoked paprika
1t ground pepper
1/2t salt
1/4t garlic powder
Wet:
1/2c vegi broth
1/4c olive oil
1T molasses
1-1/2t cidar vinegar
1/8t brown mustard
Broth:
12 c Water
1T Pickling spice
1 medium onion, ring sliced
1-1/2t salt
1T cider vinegar
2 cloves garlic, minced
1/4t pepper
1/2t Smoked paprika
2 Bay leaves
1/2c red wine

-in a large pot combine** all the broth ingredients and bring to a boil, then turn down heat to a simmer
-mix dry ingredients with a whisk in a large bowl
-in a separate bowl mix wet ingredients
-combine wet ingredients into the dry ingredients and stir, it should make a dough.
-Place dough in cheese cloth and tie off ends with string like a Tootsie Roll.
-put roll in broth and simmer (no boiling) for 45 mins.
-after 45 minutes add potatoes and carrots and cook additional 30 min.
Serve hot with Cabbage (see below recipe)
**put pickling spices in some cheese cloth and tie off, helps later wen you don't have to eat around the spices**

Guinness Cabbage

1/8c Butter
1t Seasoning Salt
1/2 medium Cabbage, chopped and leaves separated
1/2 medium onion, chopped
1/3 can Guinness
3T Cider Vinegar
1T Brown sugar

-melt butter on high and reduce to medium heat
-add cabbage, onion, and seasoning salt. stir. cook covered for 10 min. (stir frequently)
-Add Guinness. Cover and cook 5 min
-combine vinegar and sugar and add to cabbage. cook another 5-10 minutes
serve hot with corned beef and vegis

Irish Soda Bread
for breakfast i made irish soda bread. I think my oven is Scottish so it doesn't like to bake things....it took a couple tries to get it to finish baking through. this recipe is from the cooking channel except i add orange zest!


4c flour, plus more for dusting
3T sugar
2t baking soda
1-1/2t cream of tartar
1-1/2t kosher salt
1-1/2c buttermilk
1/4c butter, melted
1/2c currants
orange zest

-preheat oven to 400F
-whisk dry ingredients together
-stir in buttermilk and melted butter with a fork
-add currants and orange zest to your liking
-knead dough on a floured surface, gently a couple times until it will form a round
-place round in a buttered cast iron skillet or a baking sheet
-bake for 40 minutes until a stick test in the center comes out clean
-slather with butter when it comes out
-eat while drinking Irish breakfast Tea!
