Though these are not my complete lists and there is so much more I would add, these are the things i love. Washington you never cease to amaze me.

I have some GREAT recipes to share. It has been month because with moving and packing/ unpacking and family business it is a bit hard to sit down and blog about the gazillion things going on. Some things you should know:
-I cloth diaper now, have a sprayer on my toilet, make my woolies, and wash them myself.
-We live on an island in the middle of a lake, the trees are taller than i could ever imagine living in, the mornings are misty/fresh/wet, and I am in love
-Our oldest has taken a liking to conquering school and is doing well, happy, and for the most part content with our decision to move to this location, he loves washington (o, and homecoming is this weekend, he looks so dandy in a suit)
-Our youngest is sitting up and attempting to crawl, has 2 teeth!, and is accustom to the loving rough house with his brother.
-Our middle child (aka crazy sauce) is loving Play school, learning good behavior....and still potty training, how in the world am I gonna get him to ditch the diaper, over-all a general sweetheart
-We will have a new addition to our family at the end of november, she is black, big, and furry, and her name is Lady Marley
-I am re-upholstering a Satee
-My locks are BACK!

Oh SHIT Ricotta
Description: Upon realizing my ricotta had gone bad, and not having the time to make it from scratch I combined my knowledge into the micorwave and created what I needed. ;D
Ingredients:
1 cup Whole Milk
½ cup Low Fat Yogurt
1 Tbsp Lemon Juice"Fresh"
pinch SaltKosher
Directions:
1. mix ingredients glass, microwave safe bowl (not the salt), microwave 4 minutes
2. use sieve or better a cheese cloth and drain liquid. Add a pinch of salt and stir. DONE

Sweet Potato in coconut Sauce 
over Teff
Description: Combo of Thai, Ethiopian, and Carribean cuisine. Yummy
Ingredients:
½ can Coconut Milk
1 Sweet Potatocut into chunx
1 Lemongrasssliced down center 
½ cup Mushroomsdiced
½ cup Carrotsdiced
Teffcooked
Salt/Pepper
1 Tbsp Jamaican Jerk

1. ½ water in sauce pan, add sweet potatoes. Cook until slightly tender.
2. Add coconut milk, lemongrass, carrots, mushrooms, salt/ pepper. bring to boil, lower heat to simmer and cover for 20 min.
3. Pour over Teff

Pumpkin Sage Pie
Description: Pumpkin Autumn Treat
Ingredients:
1 cup Pumpkinmashed
¾ cup RicottaHEAPING
2 Eggswhisked
3 Tbsp Walnutsroasted
1 small handfull Fresh Sagetorn
 cup Fetacrumbled
1 links Apple Smoked Field Roast Sausagecrumbled
Salt/Pepper
Balsamic Vinegar
Pie CrustFrozen
1 clove Garlic Cloveminced
Directions:
Set the oven to warm to 375F degrees
To a bowl add the mashed pumpkin, ricotta, eggs, pine nuts, feta and sage and mix to combine
Season with pepper (plenty of salt in feta and sausage)
Spread an even layer of crumble sausage into frozen pie crust, Spoon in the pumpkin mixture. Use back of spoon to evenly distribute it around the dish
Bake for approximately 25 minutes until the top starts to brown
Remove from the oven and rest for 5 -10 minutes prior to slicing to serve
Slice to serve and top drizzle very sparingly with a few drops of good quality balsamic vinegar*.

Notes: * Can make a balsamic vinegar glaze buy putting 3 T Balsamic vinegar into saucepan on high. Add pinch of cinnamon and/or allspice and 1 T sugar. Bring to a boil and cook for 1 min.

Cajun Grilled "pork" w/ Creamy Mushroom Sauce
Description: Vegetarian version on Cajun pork in creamy sauce. Pairs great with a side of green beens. Great for a cold fall evening!
Ingredients:
1 Can Vegetarian Baked Beans
½ cup Tvp
1 Egg
½ cup Wheat Germ
¼ tsp Cajun Spice ***plus a pinch
2 Tbsp Butter
1 cup MushroomsChopped rough and small
½ cup Cream Cheese
3 Green Onionschopped thin
1 Garlic Cloveminced
¼ cup Vegi Broth
Directions:
preheat oven to 400℉

1. In a food processor combine: TVP, ½ Baked bean liquid (then rinse the beens), (rinsed) baked beans, egg, and wheat germ. Process until combine evenly. *

2. Spoon out mixture on Greased cookie sheet. Sprinkle a pinch of cajun seasoning on top and press each down with the back of a spoon. Pop in oven for 10 min.

3. Meanwhile, make sauce. In a sauce pan over medium heat, melt butter. Add mushrooms, whites of the green onion (your going to add the greens parts to sauce after done cooking), garlic, and a generous pinch of Cajun spice. Once mushrooms cooked through, stir in broth and cream cheese. ** Bring to low boil and shut off heat.

4. By now your "pork" hehe should be done in the oven. Take it out and set it aside. In a skillet melt a T of butter over medium, and add patties to brown up. Serve hot with sauce on top. don't forget your green beans.

Notes: * You can add spinach in if you like for some green goodness and nutrients. ** You can try to premix the broth and cream cheese before adding it so the cream cheese is softer. Or you can pull pout cream cheese from fridge 30 min before you start making the dish. *** homemade cajun seasoning: 1 t salt, 1 t garlic salt, 2 t paprika, 1 t pepper, 1 t onion powder, 1 t cayenne pepper, 1 ¼ t oregano, 1 ¼ t thyme. save in glass canister
